We use between and , grit size. For a nice polished edge when needed, we buff on jewelers rouge, which is comparable to a grit size of about ,. Deburring and polishing on a leather belt with compound gives an even slicker, more polished edge. It is all about the perfect compromise between slicing and cutting performance, combined with longevity of the edge, and it all depends on the knife in our hands.

There’s nothing worse than a broken knife tip. To recreate a knife tip we grind down the metal from the existing blade and form a new tip. Knives with repaired tips are slightly shorter than their original length. We can repair a broken knife tip one of two ways. We can create a new tip by changing the curve of the blade edge entirely or keep the upper edge of the blade intact and redo the curvature of the bottom of the blade.
